Curried Egg Salad with homemade Spice Mix

INGREDIENTS:

Spice Mix:

• 2 Teaspoons Ground Coriander Seed
• 1 Teaspoon of Ground Tumeric
• 1 Teaspoon of Ground Yellow Mustard Powder
• 1 Teaspoon of Chilli Powder
• 1/2 Teaspoon of Cayenne Pepper
• 1/2 Teaspoon of Ground Cumin
• 1/4 Teaspoon of Ground Cardamon

The Dressing:

• 1&1/2 Teaspoons of Spice Mix
• 2 Tablespoons of Mayonnaise
• 1 Teaspoon of Dijon Mustard

The Salad:

• 6 Eggs
• 1/2 Red Onion
• 1 Apple
• Small bunch of Coriander
